The Hollows is een initiatief van Jason Pellett. Hij was voormalig brouwer van de Orpheus Brewing in Atlanta (USA) en verhuisde voor de liefde naar Amsterdam. Het bloed kroop waar het niet kon gaan en dus is hij op een kleine brouwinstallatie weer bier gaan brouwen.
